Chicken Parm

Ingredients

  • 1 extra-large egg
  • 2 cups Panko
  • 1/4 cup grated Parmesan
  • 1 tsp olive oil
  • 1 tsp Italian seasoning
  • salt and black pepper to taste
  • 4 chicken breasts, pounded to 1/3-inch
  • 1 1/2 cups tomato sauce, heated
  • 1/2 cup shredded mozzarella
  • Garlic-Lemon spinach

Directions

  1. Preheat oven to 400.

  2. Crack the egg into a shallow dish and beat. In a separate shallow dish, combine the panko, Parmesan, olive oil, Italian seasoning and a few pinches of salt and black pepper.

  3. Working with one piece of chicken at a time, dip into the egg, then into the panko, using your fingers to press the crumbs into the chicken. Place the chicken on a baking sheet or roasting pan and place in the oven on the middle rack. Bake for about 12 minutes, until the chicken is firm to the touch and the panko is golden brown.

  4. Remove the chicken from the oven and set the oven to broil. Cover each breast with a good ladle of tomato sauce and a handful of mozzarella. Return to the middle rack of the oven and broil for about 3 minutes, until the cheese is melted and bubbling.

  5. Serve the chicken over the spinach with extra tomato sauce, if you like.
