Blue Cheese Biscuits with Beef and Horseradish-Chve Cream

Ingredients

  • 2 cups self-rising flour
  • 1 (8oz.) container sour cream
  • 1/2 cup butter,, melted
  • 1 (4oz.) pkg. crumbled blue cheese
  • 2 ( 6oz.) beef tenderloin steaks (about 1 1/2 inches thick)
  • 1/2 tsp. slat
  • 1/2 tsp. pepper
  • 1/2 Tbsp. vegetable oil
  • Horseradish- Chive Cream:
  • 1 (8oz.) container sour cream
  • 1 Tbsp. prepared horseradish
  • 1 Tbsp. Dijon mustard
  • 1 Tbsp. chopped fresh chives

Directions

  1. Stir together first 4 ingredients just until blended.
  2. Turn dough out onto a lightly floured surface. Pat dough to a 1/2-inch thickness; cut with a 2-inch round cutter. Place on lightly greased baking sheets.
  3. Bake at 425 degrees for 12 to 15 minutes or until lightly browned.
  4. Sprinkle steaks with salt and pepper. heat oil in a small skillet over high heat; add steaks, and cook 8 to 9 minutes on each side or to desired degree of doneness. Remove steaks from pan; let stand 15 minutes.
  5. Cut steaks into 1/4-inch slices. Split biscuits in half and top half evenly with beef slices and Horseradish- Chive Cream. Top with remaining biscuit halves.

  8. Stir together all ingredients. Chill until ready to serve.
