Amber Pie

Ingredients

  • 1(9-inch) unbaked pie crust
  • 5 Tbsp. butter
  • 3 eggs
  • 2 Tbsp. all-purpose flour
  • 1 cup cane syrup OR sorghum syrup OR dark corn syrup
  • 1/3 cup granulated sugar OR brown sugar
  • 1/4 cup cream
  • 1/4 cup tart jelly such as crab apple or red currant (some recipes call for blackberry)

Directions

  1. Heat oven to 350 degrees. Line a 9-inch pie plate with pie crust.
  2. In a small saucepan, melt the butter; set aside.
  3. In a medium bowl, whisk eggs until light in color. Add the flour, syrup, melted butter, sugar and cream and whisk until thoroughly combined.
  4. Spread jelly in the bottom of the pie crust. Pour egg mixture over jelly. Bake 35 to 45 minutes or until filling is set in the center.
