Boiled Cider Pie

Ingredients

  • 6 cups apple cider
  • 1 (9-inch) unbaked pie crust
  • 3 eggs
  • 1 cup whole milk
  • 1/2 cup maple syrup OR sorghum syrup OR granulated sugar
  • 1/4 cup unbleached all-purpose flour

Directions

  1. Pour cider into a large pot. Bring to a boil over high heat; reduce heat to a simmer. Simmer, uncovered until cider is reduced to 1 1/2 cups. Cool to room temperature.
  2. Heat oven to 350 degrees. Line a 9-inch pie plate with pie crust.
  3. In a large bowl, whisk the eggs until light in color. Add the cider, milk, syrup or sugar, and the flour and mix until well combined. Pour into the prepared pie plate. Bake 45 minutes or until filling is just set in the center.
  4. Cool completely before cutting and serving.
