Broccoli with Pimiento Cheese Sauce

use any leftover sauce along with leftover turkey or chicken to make an open-faced sandwich

Ingredients

  • 2 lb. fresh broccoli, cut into spears
  • Pimiento Cheese Sauce
  • 1 cup soft white breadcrumbs
  • 2 Tbsp. butter, melted
  • 1/3 cup shredded Parmesan cheese
  • Pimiento Cheese Sauce:
  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • 1/4 tsp. salt
  • 1 tsp. Worcestershire sauce
  • 2 cups (8oz.) shredded sharp Cheddar cheese
  • 1 (4 oz.) jar diced pimiento, drained

Directions

  1. Arrange broccoli in a steamer basket over boiling water. Cover, and stem 5 minutes or until crisp-tender.
  2. Arrange broccoli in lightly greased 11 × 7-inch baking dish. Pour Pimiento Cheese Sauce evenly over broccoli.
  3. Combine breadcrumbs, melted butter, and Parmesan cheese; sprinkle evenly over cheese sauce.
  4. Bake at 375 degrees for 20 minutes or until thoroughly heated.
  5. Pimiento Cheese Sauce:

  6. Melt butter in a heavy saucepan over medium heat; add flour stirring medium heat;
  7. add flour stirring until smooth. Cook, stirring constantly, 1 minute.

  8. Add milk gradually; cook, stirring constantly until mixture is thickened and bubbly. Stir in salt and remaining ingredients.
