Bulgar Pilaf

Ingredients

  • 1/2 cup each diced onion, celery and red bell pepper
  • 1 tbsp minced fresh garlic
  • 1 tbsp olive oil
  • 1 1/2 cup chicken broth
  • 1 cup dry quick-cooking bulgar
  • 1 tsp kosher salt
  • 1/2 tsp red pepper flakes
  • 1/2 cup chopped walnuts, toasted
  • 1/4 cup chopped fresh parsley
  • 1 tbsp minced lemon zest

Directions

  1. Saute onion, celery, bell pepper, and garlic in oil in saucepan over medium-high heat until veggies begin to soften, about 4 minutes.

  2. Stir in broth, bulgar, sat and pepper flakes; bring to a boil. Reduce heat to low and simmer, covered, until bulgur is tender, about 15 minutes. Stir in walnuts, parsley and zest.
