Roasted Mushrooms

Ingredients

  • 2 lb petite button mushrooms
  • 4 tbsp olive oil
  • salt and black pepper to taste
  • 4 tbsp unsalted butter, melted
  • 1 tbsp minced fresh garlic
  • 2 tbsp chopped fresh parsley
  • 1 tsp fresh lemon juice

Directions

  1. Preheat oven to 425.

  2. Toss mushrooms with oil and season with salt and pepper. Transfer mushrooms to a baking sheet and roast until tender and browned , and moisture is released and evaporated, about 20 minutes.

  3. Melt butter in a small saucepan over medium-low heat. Add garlic; cook until fragrant, 3-4 minutes. Stir in parsley and lemon juice and toss with mushrooms while still hot; serve immediately.
