Cheesy Hamburger Skillet

Ingredients

  • 2 cups whole wheat macaroni or favorite high-fiber elbow macaroni
  • 1 small red bell pepper, diced
  • 3/4 cup diced onion
  • 3 cloves garlic, peeked, minced
  • 1 lb. lean ground beef or turkey
  • 1 (14 oz.) can diced tomatoes, no salt added, do not drain
  • 1 Tbsp. dried thyme leaves
  • 1/2 tsp. salt
  • 1/4 tsp. ground black pepper
  • 3 oz. shredded cheddar cheese

Directions

  1. Place the macaroni in a skillet that’s at least 2 to 2 1/2inches deep. Pour about 3 cups water over the pasta. Bring to a boil, stirring constantly. Cook until the macaroni is al dente (just a little underdone), about 7 minutes. Most of the water will absorb, but drain any that is remaining. Set aside.
  2. In large skillet over medium heat, add the pepper, onion, garlic and beef or turkey. Cook, crumbling meat with a spoon, until cooked through, about 15 minutes. Drain fat.
  3. Return meat mixer to skillet and add macaroni, tomatoes,thyme, salt and pepper and mix well. Sprinkle with cheese, cover, and cook over medium heat until cheese is melted, 5 to 7 minutes.
