Philosopher’s Black Eye salad

quantities given are enough for herd of buffalo.
Even 1/3 to 1/4 is too much.

Ingredients

  • 12 cups of dried black-eye beans
  • 2 diced red capsicum
  • 5 diced green capsicum
  • 2 diced large onions
  • 3 cups raisins
  • 1 bunch chopped coriander leaf
  • 1 diced Granny Smith apple
  • 1.5 cups corn oil
  • 0.75 cups wine vinegar
  • 1T salt
  • 4T black pepper
  • 5T curry powder
  • 0.5T ground cloves

Directions

  1. If time, soak beans to speed cooking. (If you soak them overnight, they’ll only take about 20-30mins to cook)

  2. Cook beans in boiling water with 4T salt, until tender.

  3. Immerse in cold water.

  4. Mix oil, vinegar, spices to make dressing.

  5. Combine w capsicums, onions, raisins, apple & coriander in bowl. [NB: it’s good to soak the raisins in hot water first, to plump them up]

  6. Add beans, mix

  7. Serve chilled.
