Crunchy Marinated Carrots

Ingredients

  • 4 carrots, peeled and cut into 3-inch sticks
  • 1 1/2 Tbsp. cider vinegar
  • 1 1/2 Tbsp. vegetable oil
  • 1 small garlic clove, minced
  • 1/4 to 1/2 tsp. salt
  • 1/4 tsp. sugar
  • Chopped fresh parsley (optional)

Directions

  1. Combine first 6 ingredients; cover and chill 8 hours. Drain. Sprinkle with parsley, if desired.
