Chile Pepper Pork Chops

Ingredients

  • 3 plum tomatoes, chopped
  • 1/2 small onion, chopped
  • 2 Tbsp. chopped fresh cilantro
  • 1 garlic, minced
  • 2 1/2 tsp. McCormick Gourmet Collection Chipotle Chile Pepper, divided
  • 3/4 tsp. salt, divided
  • 3 Tbsp. fresh lime juice, divided
  • 6 (1-inch thick) boneless pork loin chops

Directions

  1. Stir together first 4 ingredients, 1/2 tsp. chipotle chile pepper, 1/4 tsp. salt, and 2 Tbsp. lime juice; cover and chill 30 minutes.
  2. Combine remaining 2 tsp. chipotle chile pepper and remaining 1/2 tsp. salt; rub evenly over pork chops. Sprinkle with remaining 1
  3. Tbsp. lime juice.

  4. Grill pork chops, covered with grill lid, over medium-high heat (350- 400 degrees) 6 to 7 minutes on each side or until done. Serve immediately with tomato mixture.
  5. Note: Pork chops may also be cooked on the stove top in 1 Tbsp. olive oil in a large nonstick skillet over medium-high heat 6 to 7 minutes on each side or until done.
