Greek Lamb Meatballs with Salad and Tzatziki

Ingredients

  • Olive oil, for brushing
  • 1/4 cup panko
  • 1/4 cup milk
  • 1 1/4 lbs ground lamb
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1 garlic clove, minced
  • 1 tsp dried oregano
  • 1 tbsp chopped mint
  • salt and pepper
  • 1/4 cup crumbled feta
  • 1 head butter lettuce, torn into pieces
  • 1 large tomato, diced
  • 1 medium cucumber, thinly sliced
  • Tzatziki Sauce (see recipe)

Directions

  1. eheat oven to 400.

  2. Brush a large baking sheet with a little olive oil.

  3. In a large bowl, combine the panko and the milk and let stand for 5 minutes. Add the lamb, coriander, cumin, garlic, oregano, mint, salt and pepper, to the soaked panko and mix well. Gently fold in the feta, then form the mixture into 1 1/2-inch balls. Arrange the meatballs in a single layer on the prepared baking sheet. Bake in the oven for about 15-20 minutes, until cooked through and lightly browned.

  4. While the meatballs are baking, make the salad. In a large bowl, toss together the lettuce, tomato, and cucumber. Transfer to a serving platter. Just before serving, add the meatballs, drizzle with Tzatziki and garnish with pepper.
