Smoked Paprika and Lemon Marinated Pork Kabobs

Ingredients

  • 1/3 cup finely chopped parsley
  • 1/4 cup olive oil
  • 2 tbsp minced red onion
  • 1 tbsp lemon juice
  • 1 tbsp smoked paprika
  • 2 tsp ground cumin
  • 1 garlic clove, minced
  • 1/4 tsp cayenne pepper
  • 1/2 tsp salt
  • 2 pork tenderloins, each about 1 lb, trimmed of silver skin and any excess fat, cut into 1 1/4-inch cubes
  • 1 lemon, cut into wedges, for serving

Directions

  1. In a large bowl, whisk together the parsley, olive oil, onion, lemon juice, smoke paprika, cumin, garlic, cayenne, and salt. Add the pork and toss to coat well. Cover and refrigerate, stirring occasionally, for at least 4 hours or as long as overnight.

  2. Soak bamboo skewers in water for 30 minutes.

  3. Preheat the grill to high heat.

  4. Remove the meat from the marinade, discarding the marinade. Thread the meat onto the soaked skewers and place the skewers on the grill. Cook, with the lid closed, turning occasionally, until the pork is cooked through and browned on all sides, about 8-10 minutes total.

  5. Transfer the skewers to a serving platter and serve immediately with the lemon wedges.
