Buffalo Chicken Salad

Ingredients

  • 1 chicken breast
  • 1 tbsp butter
  • 1 tbsp olive oil
  • Kosher salt and black pepper to taste
  • 1/2 cup Louisiana hot sauce
  • 6 cups chopped salad greens
  • 1/2 cup Blue Cheese Dressing (see recipe)
  • Extra blue cheese crumbles
  • celery sticks

Directions

  1. Place your palm on top of the chicken breast and use a sharp knife to slice right through the middle horizontally, making two thin cutlets.

  2. Heat the butter and olive oil in a medium skillet over medium-high heat and add the chicken to the pan. Sprinkle with salt and pepper and cook on both sides until the chicken is golden and done in the middle, 3-4 minutes per side.

  3. Reduce heat to low and pour the hot sauce over the chicken. Turn the chicken over to coat it thoroughly in the sauce, then turn off the heat. Keep the chicken warm in the skillet.

  4. To assemble the salad, place the greens in a bowl and drizzle on the blue cheese dressing. Toss to coat the greens with the dressing. Divide the greens between two bowls.

  5. Slice the chicken and place chicken over each of the salads. Sprinkle on extra blue cheese crumbles and serve with celery sticks.
