Ready-to-go Grilled Chicken

Ingredients

  • 12 chicken breasts
  • 2 cups olive oil
  • Juice of 12 lemons
  • 3 heaping tbsp Dijon
  • 1/2 cup honey
  • 1 tbsp dried thyme
  • 1 tbsp ground oregano
  • 1 tbsp Kosher salt
  • 1 tsp black pepper

Directions

  1. In a bowl, combine the olive oil, lemon juice, Dijon and honey. Then add thyme, oregano, salt and pepper and whisk to combine.

  2. Place the chicken breasts in one or two large Ziploc bags and cover them with the marinade. Then seal the bags and let them marinate in the fridge for 8-12 hrs.

  3. Grill the chicken on both sides for 7-10 minutes total, until golden brown and completely cooked through.

  4. To prepare them for freezing, let them cool, then place them on a parchment-lined baking sheet and place them directly in the freeze for 30-45 minutes to “set” the surface.

  5. From there, transfer them into small or large freezer bags and store in the freezer.
