Miniature Date Muffins

Ingredients

  • 1 (1 lb. 6oz.) pkg. date quick bread-and-muffin mix
  • 1 Tbsp. grated orange rind
  • 1 large egg, lightly beaten
  • 1 cup orange juice
  • 1/2 cup butter or margarine, melted

Directions

  1. Stir together all ingredients; spoon evenly into lightly greased miniature muffin pans.
  2. Bake, in batches, at 400 degrees for 10 to 12 minutes or until golden. Remove muffins from pans immediately, and cool on wire racks.
