Sausage Stir-Fry

If you decide to use regular smoked sausage, omit the sesame oil.

Ingredients

  • 1 lg. lite smoked sausage, sliced
  • 2 tsp. sesame or vegetable oil
  • 1 garlic clove, minced
  • 1 (16 oz.) pkg. frozen stir-fry vegetables, thawed
  • 1 (8 oz.) pkg. frozen sugar snap peas, thawed
  • 2 Tbsp. soy sauce
  • 1/2 tsp. salt
  • 1/2 cup cashews
  • Hot cooked rice

Directions

  1. Heat skillet or wok at medium-high heat 2 minutes. Add sausage, and stir-fry 8 minutes or until browned. Remove from skillet.
  2. Heat oil in skillet. Add garlic, and stir-fry 1 minute. Add mixed vegetables, peas, soy sauce, and salt; stir-fry 5 minutes.
  3. Add sausage, and stir-fry 2 minutes or until thoroughly heated. Sprinkle with cashews, and serve over rice.
