Strawberry Cheesecake

Ingredients

  • 1 3/4 cups graham cracker crumbs
  • 1/2 cup butter or margarine, melted
  • 1/4 cup chopped pecans
  • 1/2 tsp. ground cinnamon
  • 2 (8oz.) pkg. cream cheese, softened
  • 1 (16 oz.) container sour cream
  • 2 large eggs
  • 1 cup sugar
  • 1/4 tsp. salt
  • 2 tsp. grated lemon rind
  • 2 tsp. vanilla extract
  • 1/2 tsp. almond extract
  • 1/3 cup red currant jelly
  • 1 tsp. water
  • [2 cups halved fresh strawberries

Directions

  1. Combine first 4 ingredients, stirring well; press into bottom and 1 inch up sides of a 9-inch springform pan.
  2. Beat cheese and next 7 ingredients at medium speed with an electric mixer until smooth. Pour into crust.
  3. Bake at 375 degrees for 1 hour or until center of cheesecake is set. Cool on a wire rack chill 8 hours.
  4. Stir together jelly and 1 tsp. water in a small saucepan. Cook over low heat until jelly melts; cool slightly. Arrange strawberries over cheesecake; brush with jelly mixture.
