Slow-Cooker Sausage and Tater Totr Casserole

Ingredients

  • 12 eggs
  • 3/4 cup half-and-half
  • 1/4 tsp. smoked paprika
  • 1/2 tsp. salt
  • 1/4 tsp. ground black pepper
  • 5 oz. sharp cheddar cheese, shredded
  • 5 oz. Monterey Jack or pepper Jack cheese, shredded
  • 1/2 cup finely chopped green onions, divided use
  • 6 cups frozen tater tots
  • 1 lb. ground pork sausage, cooked, drained
  • 1/2 cup chopped roasted red pepper (from a jar is okay)

Directions

  1. Coat the cooing vessel of 5 to 6-quart slow cooker with vegetable oil or cooking spray.
  2. In medium bowl, beat eggs, half-and-half, smoked paprika, salt and pepper with whisk.
  3. In a separate bowl, combine the cheeses. reserve 1 cup of the cheese mixture and 2 Tbsp. of the green onions.
  4. Layer half of the tater tots, half of the sausage, all of the roasted peppers and remaining green onions in the slow cooker. Top with half of the cheese.
  5. Repeat using the remaining tater tots, sausage and cheese. Pour egg mixture over layers.
  6. Cover and cook on low for 7 to 8 hours or until egg mixture is set.
  7. Sprinkle reserved cheese and green onions over top of casserole. Cover and cook 10 to 20 minutes longer or until cheese is melted.
