Apple Beef Brisket

Ingredients

  • 8 small red potatoes, quartered
  • 1 large onion, peeled and cut into wedges
  • 1 apple, peeled, cored and finely diced
  • 3 to 4-pounds of corned beef brisket
  • 1/2 head of cabbage, cut into chunks
  • 4 cups apple cider
  • 3/4 cup brown sugar, packed
  • 2 tbs Dijon mustard
  • 1/4 tsp ground cloves
  • 1/4 tsp black pepper

Directions

  1. Place potatoes, onion and apple in a large crockpot.

  2. Top with corned beef brisket.

  3. Place cabbage on top.

  4. In a small bowl whisk together rest of ingredients.

  5. Pour over items in the crockpot.

  6. Cook on low for 6 to 8 hrs or on high for3 to 4 hrs.
