Shrimp Rellenos

Ingredients

  • 3 (4 oz.) cans whole green chiles
  • 6 cups water
  • 3/4 lb. unpeeled, medium-size fresh shrimp
  • 1 small red apple, diced
  • 1/2 cup (2 oz.) shredded sharp Cheddar cheese
  • 2 jalapeno peppers, seeded and minced
  • 4 green onions, thinly sliced
  • 1/2 tsp. grated lime rind
  • 2 tsp. fresh lime juice
  • 3 1/2 Tbsp. mayonnaise
  • 6 cups mixed salad greens

Directions

  1. Cut green chiles lengthwise on 1 side; remove and discard seeds. Drain well on paper towels.
  2. Bring 6 cups water to a boil; add shrimp, and cook 3 to 5 minutes or just until shrimp turn pink. Drain and rinse with cold water. Chill.
  3. Peel shrimp, and devein, if desired. Dice shrimp.
  4. Stir together shrimp,. diced apple, and next 6 ingredients. Spoon shrimp mixture evenly into green chiles, and arrange on mixed salad greens.
