Roasted Pork with Cajun Slaw

Ingredients

  • 1 tbsp + 2 tsp Cajun seasoning
  • 1 tbsp + 2 tsp packed light brown sugar
  • 1 1/2 lbs pork tenderloin
  • Kosher salt
  • 2 tsp olive oil
  • 1/2 cup mayo
  • 2 tbsp Creole mustard
  • Juice of 1 lemon
  • 2 tbsp drained horseradish
  • 12 oz package broccoli slaw mix
  • 2 small be peppers (1 red, 1 orange), thinly sliced
  • 3 scallions, thinly sliced

Directions

  1. Preheat oven to 400. Mix 1 tbsp each Cajun seasoning and brown sugar in a small bowl. Sprinkle the pork with 1/2 tsp salt and rub with the sugar-spice mixture. Heat the olive oil in a large ovenproof skillet over medium heat. Add the pork and sear until browned on all sides, about 5 minutes. Transfer to the oven and roast until it reaches 145. Transfer the pork to a cutting board and let rest 5 minutes before slicing.

  2. Meanwhile, make the slaw: Whisk the mayo, mustard, lemon juice, horseradish and remaining 2 tsp each of Cajun seasoning and brown sugar in a small bowl. Toss the slaw mix, bell peppers and scallions in a large bowl. Add the mayo dressing and toss to coat. Slice the pork and divide among plates. Drizzle with any juices from the skillet. Serve with the slaw.
