Southwestern Chicken Bundles

Ingredients

  • 4 skinned and boned chicken breast halves
  • 1 (5.25 oz.) can whole green chiles, drained
  • 4 (1 oz.) slices Monterey Jack cheese with peppers
  • 1 large egg
  • 2 Tbsp. water
  • 1 cup finely crushed tortilla chips
  • Salsa
  • Garnish: lime wedge

Directions

  1. Place chicken between 2 sheets of heavy-duty plastic wrap, and flatten to 1/8-inch thickness, using a meat mallet or rolling pin. Top each chicken breast with 1 green chile and 1 cheese slice; roll up, securing with wooden picks.
  2. Whisk together egg and 2 Tbsp. water in a shallow bowl. Dip chicken rolls in egg mixture; dredge in crushed chips. Place rolls in a lightly greased 13 × 9-inch pan.
  3. Bake at 375 degrees for 30 to35 minutes. Let stand 5 minutes before slicing. Serve with salsa; garnish, if desired.
  4. ngy Slaw: Whisk together 1/4 cup fresh lime juice (about 2 large limes). 1/4 cup olive oil, and 1 (0.06 oz.) envelope zesty Italian dressing mix in a large bowl. Add 2 (11.5 oz.) package shredded coleslaw mix and 1/3 cup chopped fresh cilantro, tossing to coat. Cover and chill coleslaw at least 2 hours.
