Mixed Fruit with Sour Cream Sauce

Ingredients

  • 1/3 cup granulated sugar
  • 1 cup water
  • 6 fresh mint leaves
  • 1 (8oz.) can pineapple chunks
  • 1 cup seedless green grapes
  • 1 cup sliced strawberries
  • Sour Cream Sauce:
  • 1/3 cup butter or margarine, softened
  • 1 cup powdered sugar
  • 1/2 cup sour cream
  • 1/2 tsp. lemon juice
  • 1/4 tsp. vanilla extract

Directions

  1. Bring first 3 ingredients to a boil in a saucepan, and cook, stirring constantly, 4 to 5 minutes or until sugar mixture reaches a syrup consistency. Discard mint leaves, and cool sugar syrup completely.
  2. Combine pineapple, banana, apple, grapes and strawberries in a large bowl. Pour syrup over fruit mixture; toss gently. Cover and chill at least 1 hour. Serve with Sour Cream Sauce.
  3. Sour Cream Sauce:

  4. Beat butter and powdered sugar at medium speed with an electric mixer until smooth. Add sour cream, lemon juice, and vanilla, beating until mixture is creamy. Cover and chill until ready to serve or up to 8 hours.
