Pea Salad with Cheddar and Mint

Ingredients

  • 3 cups frozen shelled green peas, partly thawed
  • 4 green onions, finely chopped
  • 1 to 2 Tbsp. chopped fresh mint
  • 2 1/2 oz. sharp cheddar cheese, cut into tiny cubes (about 1/2 cup)
  • 1/4 cup plain Greek yogurt, or more to taste
  • Pinch ground red pepper (cayenne)
  • Salt and ground black pepper
  • 4 slices bacon, cooked and crumbled, optional

Directions

  1. Combine all ingredients in a large bowl and mix well. Cover and refrigerate until chilled.
