Jicama-Carrot Slaw

Ingredients

  • 3 tbsp lime juice
  • 3 tbsp chopped currants or dates
  • 2 tbsp vegetable oil
  • 1 medium carrot
  • 1 lb jicama, peeled
  • salt
  • torn mint

Directions

  1. Combine lime juice and currants and vegetable oil in a large bowl; let stand 10 minutes. Cut carrot and jicama into matchsticks. Add the veggies into the currant mixture, season with salt and toss to coat. Stir in some mint.
