Olive Salad for Muffuletta sandwiches

Ingredients

  • 2/3 cup medium-size ripe olives
  • 2/3 cup pimiento-stuffed olives
  • 1/2 small red bell pepper, diced
  • 1/4 small sweet onion, diced
  • 1 garlic clove, minced
  • 1 Tbsp. olive oil
  • 2 tsp. red wine vinegar

Directions

  1. Place olives in a medium bowl; coarsely crush olives with a fork. Stir in bell pepper, onion, garlic, olive oil and vinegar. Cover and refrigerate 30 minutes to let flavors blend.
