King Ranch Casserole

Ingredients

  • 2 tbsp. butter or margarine
  • 1 medium onion, chopped
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 3 cups chopped cooked chicken
  • 1 (10 3/4 oz.) can cream of chicken soup
  • 1 (10 3/4 oz.) can cream of mushroom soup
  • 1 (10 oz.) can diced tomatoes and green chiles
  • 1 tsp. chili powder
  • 1 tsp. ground cumin
  • 2 cusp tortilla chips, crushed
  • 1 Reynolds Pot Lux Cookware Pan with Lid
  • ( 9 x 12 1/2-inch size)
  • 2 cups (8 oz.) shredded cheddar cheese
  • Garnish; chopped fresh cilantro

Directions

  1. Preheat oven to 325 degrees for at least 20 minutes.
  2. Melt butter in a medium skillet over medium-high heat. Add chopped onion and bell peppers; sauté 8 minutes or until tender.
  3. Stir in chopped cooked chicken and next 5 ingredients; cook, stirring occasionally, 2 minutes.
  4. Place half of crushed tortilla chips in bottom of pan. Layer with half each of chicken mixture and shredded cheddar cheese. Repeat layers, ending with cheese.
  5. Bake, uncovered, at 325 degrees for 45 minutes or until mixture is thoroughly heated. Garnish, if desired.
