Cheesy Sausage and Pea Bake

Ingredients

  • 1 Tbsp. olive oil
  • 1 Tbsp. unsalted butter
  • 3 cloves garlic, minced
  • 1 medium yellow onion, diced
  • 1 1/2 lbs. sweet Italian sausage, remove from casing
  • 3 Tbsp. flour
  • 2 cups 1 % low-fat milk
  • 1/2 cup low-fat cream cheese
  • 1 lb. cooked rotini or ziti
  • 8 oz. shredded Italian cheese blend (like Sargento Reduced Fat 4 cheese Italian)
  • 2 cups frozen peas
  • 1/2 tsp. salt
  • freshly ground black pepper
  • 1/4 cup grated Parmesan

Directions

  1. Preheat oven to 350 degrees.
  2. Heat oil and butter in a large skillet over medium. Add garlic and onion and cook until onion is translucent. Add sausage and cook until browned, breaking apart with a wooden spoon. Stir in flour and milk and mix well.
  3. Reduce heat to medium-low. Add cream cheese and stir until melted. Remove from heat. Add cooked pasta. Stir in shredded cheese, peas, salt and pepper. Pour into a shallow 3-quart casserole dish. Sprinkle with Parmesan. Bake 25 minutes, or until top is brown.
