Sernik Babci (Polish-style Cheesecake)

Ingredients

  • Dough:
  • 1 1/4 cups all-purpose flour, plus more for dusting
  • 3/4 tsp. baking powder
  • 1/4 tsp. salt
  • 1/4 cup butter or margarine
  • 1 egg
  • 3 Tsp. sour cream
  • 1/3 cup confectioners' sugar
  • Filling:
  • 6 eggs
  • 2 cups confectioners' sugar
  • 1 1/2 tsp vanilla extract
  • 1 lb. farmers cheese OR ricotta
  • 2/3 cup melted butter
  • 1 1/2 cup unseasoned mashed potatoes
  • 2 tsp. baking powder
  • 1/2 tsp. ground nutmeg
  • 1/2 tsp. salt
  • 1/4 cup grated orange zest

Directions

  1. Heat oven to 350 degrees.
  2. For the dough: Combine the flour, baking powder and salt in a bowl. Cut in butter with a pastry blender.
  3. Beat egg with sour cream. Stir in flour mixture. Stir in sugar. Knead dough until well mixed and smooth. On a floured surface, roll dough into a rectangle. Line a 13 × 9-inch pan with dough going part way up the sides.
  4. For the filling: Separate 1 egg. Reserve white for another use. Beat the yolk with the remaining eggs and sugar with an electric mixer on high speed for 5 minutes. Add vanilla and beat again until mixture piles up softly.
  5. Press the cheese through a sieve. Blend cheese with melted butter in a large bowl. Add potatoes and baking powder, nutmeg and salt. Stir in orange zest. Fold in egg mixture. Turn into crust. Bake 45 minutes. Cool completely.
