Ingredients

  • 3/4 cup shredded coconut
  • 1 cup cold, salted butter, cut into pieces
  • 1/2 cup powdered sugar
  • 2 cups all-purpose flour
  • 4 beaten eggs
  • 2 cups granulated sugar
  • 1/3 cup freshly squeezed lime juice
  • 1/3 cup vodka (can substitute whole milk)
  • 1/2 tsp. salt
  • 1 tsp. baking powder
  • 1/2 cup all-purpose flour (pack it down when you measure it)
  • Powdered sugar to sprinkle on top

Directions

  1. Preheat oven to 350 F.

  2. To make the coconut crust:

  3. Finely chop the shredded coconut or process it in the bowl of a food processor. (3/4 cup shredded can pack into 1/2 cup)

  4. Add the butter, powdered sugar and 2 cups flour, and pulse in food processor until mixture resembles coarse cornmeal.

  5. Prepare a 9-inch-by-13-inch rectangular cake pan by spraying it with nonstick cooking spray.

  6. Put the crust mixture into the prepared cake pan and spread it out with your fingers. Pat it down.

  7. Bake the coconut crust at 350 degrees for 15 minutes.

  8. Lime Layer:

  9. Combine the eggs with granulated sugar either in the food processor or whisking by hand.

  10. Add the lime juice, vodka, salt and baking powder. Mix thoroughly.

  11. Add the flour and mix until everything is incorporated. (The mixture will be runny.)

  12. After crust has baked, pour the lime mixture onto the hot crust and place the bars back in the oven.

  13. Bake for an additional 30 minutes.

  14. Remove the pan from the oven and let cool.

  15. Cover bars with foil and refrigerate it until you’re ready to serve.

  16. Cut the bars into brownie-sized pieces, place them on a pretty platter, and sprinkle them lightly with powdered sugar.
