Maple-rosemary chicken

Ingredients

  • chicken pieces and other vegetables
  • 1/2 c olive oil
  • 1/4 p maple syrup
  • 1 T apple cider vinegar
  • 1 T powdered, dried rosemary
  • 2 t dry mustard powder
  • 1-1/2 t sea salt
  • fresh rosemary, to garnish optional

Directions

  1. Preheat oven to 375 degrees. Arrange chicken in 9″ × 13″ baking dish, or similar size.

  2. In a blender/small bowl, puree together all ingredients: oil, syrup, vinegar, dried rosemary, mustard, and sea salt. Pour sauce evenly over chicken pieces, coating each.

  3. Bake for 45 minutes, or until juices run clear when poked deeply with a sharp knife.
