Red Rice

Ingredients

  • 1 small onion, chopped
  • 2 to 3 garlic cloves, chopped
  • 1 tsp. olive oil
  • 1 cup uncooked long-grain rice
  • 2 cups chicken broth or water
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1 (4.5 oz.) can chopped green chiles
  • 3 Tbsp. tomato paste
  • 1/4 cup chopped fresh parsley

Directions

  1. Sauté onion and garlic in hot oil in a large saucepan over medium-high heat 3 minutes or until onion is tender.
  2. Stir in rice and next 3 ingredients; bring to a boil. Cover, reduce heat, and cook 20 minutes.
  3. Remove from heat; stir in green chiles, tomato paste, and parsley.
