Basil and Garlic Tortellini

Ingredients

  • 1 (8oz.) pkg. frozen cheese tortellini
  • 1 Tbsp. canola oil
  • 1 (8oz.) pkg. sliced mushrooms
  • 1 (14 1/2 oz.) can no-salt-added diced tomatoes with liquid
  • 2 tsp. basil leaves
  • 1/4 tsp. garlic salt
  • 1/4 tsp. ground black pepper
  • 2 Tbsp. grated parmesan cheese

Directions

  1. Cook tortellini as directed on package. Drain well.
  2. Meanwhile, heat oil in large skillet on medium-high. Add mushrooms; cook and stir 5 minutes. Stir in tomatoes, basil, garlic salt and pepper. Bring to a boil, stirring occasionally. Reduce heat to low; simmer 5 minutes. Add tortellini and cheese; toss to coat well. Sprinkle with additional cheese, if desired.
