Balsamic Tortellini

Tortellini originated in the region of Emilia Romagna, and us said to have been inspired buy the navel of Venus, the goddess of love.

Ingredients

  • 2 Tbsp. jarred sun-dried tomatoes, chopped
  • 1 Tbsp. capers
  • 2 Tbsp. chopped walnuts or pine nuts
  • 2 cups cooked cheese tortellini
  • 1/3 cup balsamic vinaigrette

Directions

  1. Stir together tomatoes, walnuts or pine nuts and cooked cheese tortellini. Toss with the vinaigrette. Heat through on stovetop.
