Meatball Sub Pasta Bake

Ingredients

  • 1/2 lb. rigatoni or other short pasta
  • 1 Tbsp. olive oil
  • 1/2 cup chopped onion
  • 1 1/2 cups chopped carrots (5 carrots)
  • black pepper
  • 1 (26 oz. jar marinara sauce
  • 12 oz. frozen meatballs (1 oz. size)
  • 1/4 cup shredded mozzarella cheese
  • 1/4 cup finely grated Parmesan cheese

Directions

  1. Preheat oven to 350 degrees. Lightly coat a 2-quart baking dish with cooking spray.
  2. Cook pasta according to package directions. Drain, reserving 1/2 cup cooking water. Place pasta in prepared dish.
  3. Heat oil in a medium skillet over medium. Add onion, carrots and pepper and cook until softened, about 5 minutes.
  4. Add vegetable mixture, 2 cups marinara sauce and reserved pasta cooking water.to baking dish. Stir into pasta until incorporated. Arrange meatballs on top of pasta mixture. Spoon remaining sauce on top of meatballs. Top with mozzarella and Parmesan cheese. Cover with foil and bake 20 minutes. Remove foil and bake, uncovered, 10 minutes, or until cheese is melted.
