Pineapple Chicken Thighs

Ingredients

  • 8 bone-in chicken thighs (6 oz. each), skin removed
  • 1/2 cup sugar
  • 7 1/2 tsp. cornstarch
  • 1/2 tsp. salt
  • 1/2 tsp. garlic powder
  • 1/2 tsp. ground ginger
  • 1/4 tsp. pepper
  • 1 can (20 oz.) unsweetened pineapple chinks, undrained
  • 1/2 cup reduced-sodium soy sauce
  • 1/4 cup white vinegar

Directions

  1. Place the chicken in a 13 × 9 × 2 inch baking dish coated with nonstick cooking spray. Cover and bake at 350 degrees for 20 minutes.
  2. In a bowl, combine the sugar, cornstarch, and seasonings. Stir inn the pineapple, soy sauce and vinegar until blended. Pour over chicken. Bake, uncovered, clear and sauce is thickened, basting occasionally.
