Red Beans and Rice

Ingredients

  • 2 cups red beans
  • 6 cups water
  • salt to taste
  • pepper to taste
  • 1/4 cup bacon drippings
  • 2 cups diced ham, salt pork or smoked sausage
  • 1 cup onion, chopped
  • 1 cup onion, chopped
  • 2 cloves garlic, minced
  • 1/2 cup parsley
  • cooked rice

Directions

  1. Soak beans in water about 30 minutes; then cook slowly until tender (several hours). Add salt and pepper to taste. Fry cubed meat in bacon drippings, add onions and garlic, cooking until transparent. Add to the cooked beans; add parsley. Remove about one cup of the beans and mash or put through a sieve. Add to the bean pot; this will thicken the bean juice. As the beans soften, they absorb the water so it may ne necessary to add additional boiling water as they cook. Serve over rice.
