Smashed Pesto Potatoes

Ingredients

  • 1 1/2 lbs new potatoes
  • 3 tbsp butter
  • 1/4 cup milk
  • 3 tbsp pesto
  • fresh ricotta, for topping

Directions

  1. Bring potatoes to a boil in a pot of salted water. Cook until tender, about 20 minutes; drain. Melt butter and milk in the same pot; add pesto and the potatoes. Lightly smash with a potato masher. Top with fresh ricotta.
