Strawberries and prosecco

  • 500 gr very ripe strawberries
  • juice of 1 1/2 lemons
  • 3 tablespoons superfine sugar
  • 1 bottle Prosecco, fridge cold


  1. Remove the hults from the strawberries. If muddy, wash carefully, and lay out on a cloth to dry. Make sure the fruits are very dry.

  2. Cut the strawberries in half and put in a food processor with the lemon juice and sugar. Pulse-chop to a liquid pulp.

  3. Strain the pulp through a fine sieve.

  4. Mix in a cocktail shaker equal parts of strawberry and Prosecco.

  5. Pour into champagne glasses using the perforated top of the shaker, as the drink will otherwise fizz up and over.
