Classic Hot Wings

Ingredients

  • Blue Cheese Dip:
  • 1 cup mayo
  • 3/4 cup sour cream
  • 1 heaping cup blue cheese crumbles
  • 5-6 dashes Worcestershire
  • Salt and black pepper to taste
  • Hot Wings:
  • Canola oil, for frying
  • 24 chicken wing parts
  • 12 oz bottle Frank's hot sauce
  • 1 stick butter
  • Several dashes of Worcestershire
  • Several dashes of Tabasco
  • Celery sticks, for serving

Directions

  1. Begin by making a simple blue cheese dip: Combine the mayo and sour cream in a bowl. Stir in the crumbled blue cheese. Add a few shakes of Worcestershire and some salt and pepper. Then stir it together and store in the fridge, covered, until the wings are ready.

  2. Preheat oven to 325. Heat 3 inches canola oil in a heavy pot to 375. Add half the chicken wing parts to the oil and fry them until they’re golden brown and fully cooked, about 5 minutes. Remove them and drain on paper towels, then repeat with the remaining wing parts.

  3. In a saucepan, heat the hot sauce and butter over medium-low heat. Add the Worcestershire and Tabasco. Let it bubble up, then turn off the heat.

  4. Place the wings in an overproof dish and pout the hot sauce all over the top. Toss to coat, then bake for 15 minutes.

  5. Serve with blue cheese dip, celery sticks and favorite beverage!
