Watermelon Granita

Ingredients

  • 8 cups seedless watermelon chunks
  • Juice of 2 limes
  • 1/3 cup sugar

Directions

  1. Cut the watermelon into wedges. Cut off the rind and chop the watermelon into large chunks.

  2. Next, slice 2 limes in half and squeeze out the juice. Add the lime juice to a blender. Add the sugar. Pack the blender as full of watermelon chunks as you can, then blend it up until it’s totally pureed.

  3. Pour out about half the mixture into a bowl, then add the rest of the watermelon and blend it up.

  4. Pour all of the mixture into a 9×13 inch baking dish. Cover it with plastic wrap and freeze it for a good 2-3 hours. Remove the pan from the freezer and gently scrape the top layer with a spoon. Then, once you get close to the less frozen middle, cover the pan again and return it to the freezer for another couple of hours.

  5. Repeat this process. Continue until it’s all scraped.

  6. Serve the granita in a pretty glass.
