Corn Casserole with Peppers

Ingredients

  • 8 ears of corn, husked, kernels shaved off the cob
  • 1 red bell pepper, seeded and diced
  • 2 fresh jalapenos, seeded and diced
  • 1/2 cup butter
  • 1 cup heavy cream
  • 1/2 cup milk
  • Salt and black pepper to taste

Directions

  1. Preheat oven to 375.

  2. Combine the corn, bell pepper, and jalapenos in a bowl. Add the butter, cream, milk and salt and pepper to taste.

  3. Pour in a buttered baking dish and bake for 20-25 minutes, or until hot and bubbly.

  4. Give it a stir before serving in order to coat all the corn in the delicious cream/butter mixture under the surface.
