Mango Salad with Smoked Turkey

Ingredients

  • 1/4 cup salad oil, such as peanut, canola or soy
  • 1/4 tsp. finely shredded lime peel
  • 2 Tbsp. lime juice
  • 1/4 tsp. grated fresh ginger
  • 6 cups torn mixed greens
  • 4 mangoes, peeled, seeded and cut into thin slices
  • 8 oz. fat-free smoked turkey or chicken breast cut or sliced into bite-size pieces
  • 1 green onion, thinly sliced
  • 1/4 cup snipped fresh cilantro
  • Coarsely ground mixed pepper (optional)

Directions

  1. Combine oil, lime peel, lime juice, and ginger in a screw-top jar. Cover and shake well. Divide greens among eight salad plates. Arrange even amounts of the mango, turkey or chicken, and green onion on each plate of greens. Sprinkle with cilantro and pepper. Drizzle vinaigrette over salad.
