Oyster Pilaf

Ingredients

  • 3 (12 oz.) containers fresh oysters
  • 8 bacon slices
  • 1 medium onion, chopped
  • 2 celery stalks, chopped
  • 1 small red bell pepper, chopped
  • 2 tsp. salt
  • 1 tsp. pepper
  • 2 cups uncooked regular rice

Directions

  1. Drain oysters, and reserve liquid; add water to liquid to equal 2 cups. Set oysters and liquid aside.
  2. Cook bacon in a large Dutch oven until crisp; remove bacon, reserving 2 Tbsp. drippings in skillet. Crumble bacon.
  3. Saute onion and next 4 ingredients in reserved drippings; stir in oysters and half of bacon. Cook 1 minute or until oysters begin to curl.
  4. Stir in rice and reserved liquid; bring to a boil. Cover, reduce heat, and simmer 20 minutes. Remove from heat; let stand 10 minutes before serving. Sprinkle with remaining bacon.
