Adobo Chicken

Ingredients

  • 1 large sweet onion, chopped
  • 6 garlic cloves, minced
  • 3/4 cup soy sauce
  • 1 cup vinegar
  • 2 chipotle peppers in adobo sauce, minced
  • 2 lbs chicken thighs
  • 1 bay leaf
  • 1/2 tbsp whole peppercorns, slightly crushed

Directions

  1. Place bay leaf, onion, and half the garlic in the bottom of a crock pot, then cover with chicken.

  2. Mix together the remaining ingredients and pour over chicken.

  3. Cover and cook on HIGH for 4 hours or on LOW 6-8 hours.
