Italian Wedding Soup

Ingredients

  • 15 meatballs, quartered
  • 6 cups chicken broth
  • 1 chicken breast, chopped
  • 1/2 cup diced carrots
  • 2 celery stalks, chopped
  • 1 cup Garbanzo beans
  • 1 cup chopped, fresh spinach
  • 2 garlic cloves, minced
  • salt and pepper to taste
  • 1/4 cup mini Quinoa shells

Directions

  1. Add everything to the crock pot, cover and cook on LOW for 6-8 hours. Add quinoa shells the last hour of cooking.
