Lo Mein Noodles and Broccoli

Ingredients

  • 1 (8 oz.) pkg. wide lo mein noodles
  • 2 cups broccoli florets
  • 2 Tbsp. sesame oil
  • 2 Tbsp. water
  • 2 carrots, thinly sliced
  • 2 garlic cloves, minced
  • 2 tsp. minced fresh ginger
  • 1 Tbsp. chile-garlic sauce
  • 1 purple onion, halved and sliced
  • 8 fresh basil leaves, minced
  • 8 fresh cilantro sprigs, minced
  • 8 fresh mint sprigs, minced
  • 3 Tbsp. soy sauce
  • 2 Tbsp. fresh lime juice
  • 1 Tbsp. coarsely chopped peanuts

Directions

  1. Cook noodles in boiling water to cover 10 to 12 minutes or until almost tender; drain. Rinse with cold water; drain again.
  2. Sauté broccoli in oil in a larger nonstick skillet
  3. 2 to 3 minutes; add water and next 4 ingredients; cook 1 minute. Stir in lime juice; sprinkle with peanuts. Serve immediately.
