Thai Iced Tea

Ingredients

  • 6 cups water
  • 1 cup Thai tea leaves*
  • 4 cardamom pods, rushed
  • 1 whole clove, crushed
  • 1/4 tsp. cinnamon
  • 1 cup sugar
  • 1 cup half-and-half **
  • Garnish: lime-peel rose

Directions

  1. Bring 6 cups water to a boil. Stir in tea leaves and next 3 ingredients, and cover. Remove mixture from heat, and steep 5 minutes.
  2. Pour tea through a fine wire-mesh strainer into a pitcher, discarding tea leaves. Add sugar, stirring until dissolved; cool. Cover and chill 2 hours.
  3. Serve tea in a glass over crushed ice. Top with 3 to 4 Tbsp. half-and-half; garnish, if desired.
    • Thai tea may be found in the Asian sections of larger grocery stores or at Asian markets.
    • Fat-free half-and-half may be substituted for regular half-and-half.
