Ginger-Lemon Rice with Fresh Spinach

Ingredients

  • 1 tbsp unsalted butter
  • 1 tbsp grated fresh ginger
  • 2 tsp minced fresh garlic
  • 1/2 cup dry converted white rice
  • 1 1/3 cups water
  • 1 1/2 tsp minced lemon zest
  • 1 package fresh baby spinach
  • 2 tsp fresh lemon juice
  • Salt and black pepper to taste

Directions

  1. Melt butter in a saute pan over medium heat. Add ginger and garlic; cook until fragrant, 1-2 minutes.

  2. Stir in rice and cook 1 minute. Add water and zest and bring to a boil. Cover pan and reduce heat to low. Cook rice until tender and liquid is absorbed, 20 minutes.

  3. Add spinach to pan, cover, remove from heat, and let sit 5 minutes.

  4. Toss rice and spinach until spinach is wilted; stir in lemon juice and season with salt and pepper.
